Summer Discoveries + Giveaway

I have been posting my BBQ dinners for a while now on Instagram as I wanted you all to see just how many delicious options are out there for vegans such as myself. It is absolutely wonderful to be able to sit out in the sun and indulge in delicious vegan food with near and dear ones. I have made a few additions to the barbecue this year, aside from the favourite such as corn on the cob, salads and burgers etc. I have already made my thoughts very clear on the No Bull burger on a previous blog and shared some basic ideas too.

Today  I wanted to share some recipes with you, that I think will make any barbecue just that little bit more delicious. I have tried and tested all of these recipes and have ensured lots of people have taste-tested them to make sure they make the grade to share with my lovely readers.


First up is the tempeh ‘ribs’ I am obsessed with they can be made ahead of time and I have used tempeh by Impulse for all of mine, as they are by far the best I have found so far. Their tempeh is sold in blocks big enough to make 6-8 ‘ribs’, depending on how thick you want them and my recipe could not be any simpler.


I have made them two ways so far with bbq sauce and with jerk sauce, being a huge jerk fan, I prefer them this way but whatever sauce you wish to marinate them in is completely up to you. You are going to want to slice the tempeh into the size you want, I prefer 6 chunky strips but you can easily make 8 if you go slightly smaller. Cut the square in half and then each half into 3 or 4 pieces. Place them in a Tupperware box and pour 4 tablespoons of your chosen marinade in cover them and put the lid on, then you can give them a shake and make sure they are all coated evenly.

Place in the fridge for a minimum of 12 hours, though overnight is better and when you are ready to use them, place them in foil on the barbecue for approximately 15 minutes and then flip them and cook again for 15 minutes for succulent ‘ribs’. I then add some extra sauce over the top when serving to make them extra tasty but this really is optional.

Moving on to my next find for the Summer and that is, of course, the Vegan ‘Steak’, as soon as I saw that they were going to be available at Tesco I rushed out to find them and sure enough they were in stock, so naturally I wanted to try this on the BBQ as it just screamed Summer to me. The Vivera range is now in most of the Tesco stores that I have been too and I do have so Shwarma to try, which I will report back on. The whole range looks pretty good, to be honest, and reasonably priced too which is fantastic.


It cooked very well on the BBQ and it also was very tasty, without us adding anything too it which was very good, I am going to buy some more and see how they cook in the normal oven but was very impressed and will be eating lots more of these in the weeks to come.


I very rarely used the underground, or any public transport for that matter, as I truly prefer to walk, however, sometimes it is required and recently I found myself at EMbankment station without a drink, which is very unusual for me as I always carry water, but I was rather glad that I didn’t this day because they had a Costa in the station and it gave me the opportunity to taste the veganised Mint Choc Chip cooler that I have seen so much about on Instagram and let me just say it is worth the hype! It is so delicious and with the coconut milk, it makes it such a decadent and refreshing drink it is perfect for a Summery pick me up when the weather is really hot. I will definitely be drinking lots of these throughout the Summer, as they are my new favourite drink!
