Coleslaw is something that I personally could eat bowls of it by itself, but if you are a normal human being, then may I suggest you use it as a side at a barbeque or any other in the Summer.
It is such a quick and easy recipe, that takes no time at all. It is nicer when left in the fridge for an hour or so before serving but if you are in a rush, then it is still gorgeous when eaten straight away.
I’ve tried to keep the ingredients as minimal as possible, as they are all foods you will probably already have in the fridge. I am using Mr Organic’s vegan mayo for this recipe as it has the perfect consistency for binding this mixture together, it is also contains 30% less than traditional mayo.
This recipe will make roughly 4 portions. It only has 3 stages and uses just 1 bowl and a grater, and that won’t change no matter how much of you make!
1/2 x onion
1 x carrot, washed, peeled, topped and tailed
1/2 x apple, washed and peeled
4 tablespoons x Mr Organic’s mayo
4 teaspoons x all purpose seasoning
4 teaspoons x garlic puree
- Grate the carrot, apple and onions into a bowl.
- Add the seasoning and garlic puree and mix well.
- Add the mayo to the mix, you may want to add more if you like it rich.
