I won’t lie and pretend than my first attempts to make vegan pancakes, were shocking, most inedible and if I’m brutally honest, I don’t think that there would be any other living being on earth, who would describe the concoction as a pancake. However, over the past few months, I have used so many vegan recipes and even been on YouTube for some guidance, then it hit me – simple is best.
My perfect pancakes are made from 3 ingredients and they take a little longer than others to cook, however, they are absolutely divine with blueberry sauce, or with the traditional pairing of sugar and lemon juice, (just make sure the sugar is vegan).
All you will need to make 6 delectable pancakes are 1 banana, 1 cup of plain flour and ½- ¾ cup of almond milk, or any vegan milk of you choosing. Mash the banana, incorporate the flour and then add the milk little by little until you have reached your desired consistency.
You may need to add a little bit of oil to the pan, though if you have a good non stick this should not be necessary. Cook on each side for approximately 2 minutes, on a low heat, you’ll know when to flip because you will see bubbles forming on the top. Serve immediately once golden with toppings of your choosing. Fruit is always a great addition!
